Oatmeal cookie & Smashing Rosē On A Sunday.

I knew I wanted wine, so I end up at my local Target. I grabbed a bottle and headed for the checkout but of course, there would be an issue. 10:45 AM I just want to get in and get out, the problem is they don’t sell alcohol before 11 am. It’s not a regular thing for me to venture out in the morning for wine I swear, so of course, I was unaware of this rule. So now I had an extra 15 minutes to spend in target. I LOVE TARGET unless you know me personally you wouldn’t have a clue how deep this desire for Target is for me. Sometimes I’m at Target more than once in a 24 hour period, it’s BAD. I went to Target to pick up two things, Rosē & toilet paper. I left with six things. This is what an extra 15 minutes in Target will do to me.

Now I have my rosē and my plan for the rest of my Sunday is to go out on my porch in the nice sunshine and read whilst drinking the wine I had just purchased, but somehow that didn’t feel right without a treat. I went to my pantry to see what I had and realized I could make oatmeal cookies! Now, I love oatmeal cookies but there is always the debate about adding raisins or not. I’m totally on the raisins side with this one. It’s not the classic test of time cookie without them, it’s far too new agey and those sinners who add chocolate instead, no it’s just not right. Obviously, I was adding raisins to this batch.

Recipe below :

  • 1 &1/2 cups (212g) all-purpose flour (scoop and level to measure)
  • 2 tbs ground cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened slightly (it should still be somewhat cold and firm)
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tbs vanilla extract
  • 3 cups rolled old fashioned oats*
  • 1 cup raisins** (preferably from a freshly opened package)

These came out great, didn’t even set off any smoke alarms. I tend to add less butter and more vanilla and cinnamon to my recipe, but that’s just to my taste. I also don’t measure so much but I don’t believe this is the best habit to form. These oatmeal cookies are crunchy on the outside but soft and slightly spongy on the inside. The flavor reminded me of fall with all the cinnamon and brown sugar, makes me feel like I need a good cup of tea or a pumpkin spice latte. Too bad I only have my rosē, so sad.

20 minutes later……somehow the wine just disappeared out of the bottle.
